When Chicken Kiev comes up in conversation, people normally tell me it's something that is best ordered in a restaurant and not made at home. I beg to differ. Chicken Kiev, when broken down into simple steps, is quite easy to do. To me, it's similar to Chicken Parmesean.

In a nutshell, Chicken Kiev is garlic herb butter rolled inside of a chicken breast and then breaded in panko breadcrumbs. If you can mix together butter and fry some chicken in a pan, you can make this dish.

There are a couple of steps that make preparing Chicken Kiev a bit easier, and I'll tell you about them right now.

Freeze the garlic herb butter after you mix it together

The delicious herby mixture you see oozing out of the center of the chicken is just butter flavored with fresh parsley and garlic. I like to use fresh, grated, garlic, but you could use garlic powder, too. Once you mix everything together, shape the butter into a log, wrap in plastic, and then freeze for 15 minutes so it's easy to work with.

Pound out chicken breasts for Chicken Kiev and use toothpicks to secure

Using a meat tenderizer, or a rolling pin, pound chicken breasts out to an even thickness. When the herb butter is cold, slice it and place it on the widest part of the chicken. Wrap the chicken around the herb butter and secure with some toothpicks. Then, place the chicken in the freezer to really set everything up.

When the chicken has chilled for about 15 minutes, dip it into flour, then an egg wash, and then into panko breadcrumbs. The chicken gets browned in oil for about 10 minutes, and it finishes baking in the oven on a baking sheet with a wire rack.

I like to let the chicken rest for 5-10 minutes before cutting into it and watching the glorious filling spill out onto my plate. See, simple!

  • 1/2 cup unsalted butter, softened
  • 1/4 cup chopped parsley
  • 2 garlic cloves, grated
  • 1/2 tsp. dried oregano
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2 lbs. boneless, skinless chicken breasts (4-6)
  • 1/4 cup flour
  • 1 tsp. salt, divided
  • 1 egg
  • 1 Tbsp. water
  • 3/4 cup panko breadcrumbs
  • 1/2 tsp. garlic powder
  • 1/4 tsp. paprika
  • 1/4 cup olive or canola oil
  1. To make the filling, mix together the softened butter, parsley, grated garlic, oregano, salt, and pepper in a bowl.
  2. Scoop the mixture out onto a piece of plastic wrap and form into a log. Wrap tightly, and place in the freezer for at least 15 minutes.
  3. Pound the chicken breasts out between two pieces of plastic wrap or parchment paper until they're an even thickness. Lay the chicken on a baking sheet lined with parchment paper.
  4. Remove the butter filling from the freezer and cut into 4-6 strips, depending on how many chicken breasts you have.
  5. Lay one strip on the wide edge of one of the chicken pieces. Roll the chicken up around the butter. If desired, secure with toothpicks. Repeat with each piece of chicken.
  6. Place the parchment lined baking sheet with the chicken rolls into the freezer for 15 minutes.
  7. Meanwhile, preheat the oven to 400F and prepare the breading as follows.
  8. Lay three bowls out on your counter. To one, add the flour and 1/2 teaspoon of the salt. To another, add the egg and water and whisk. To the third, add the remaining salt, panko, garlic powder, and paprika.
  9. Once the chicken has chilled, heat a thick bottom skillet or dutch oven over medium high heat.
  10. Roll the chicken first in the flour, then the egg mixture, and finally the panko mixture, coating each chicken roll.
  11. Once all of the chicken rolls are coated, measure the oil into the hot skillet and swirl it around. Add the chicken rolls and cook for about 3-5 minutes per side, or until the breading is golden brown.
  12. Remove the chicken from the oil and place on a baking sheet with a rack. Place in the oven and bake for about 15- 18 minutes, or until an digital read thermometer reads 165F internally.
  13. Rest for 7-10 minutes before serving.
